Warm Chevre Salad



This Montreal inspired show stopping salad is the perfect lunch. For a vegetarian option, use a thick hummus or guacamole in place of chèvre! We love Le Grand Basil Pesto for when home made isn't an option! Add grilled shrimp,or chicken.

Serves: 1-2
Ready In: 15 minutes

Ingredients:

3 tbsp. (45 mL) warm chèvre, divided 3 cups (750 mL) mixed greens 2 tbsp. (30 mL) basil pesto 1 tbsp. (15 mL) olive oil Juice of 1/2 lemon 3 enerjive Quinoa Crackers, Rock Salt CRAVE Salt and pepper, to taste

Cooking Instructions:

On square plate place 1 tbsp. (15 mL) warm chèvre in 3 outer edges of plate making a large triangle. Place greens in centre of chèvre triangle. Whisk together pesto, olive oil and lemon juice; drizzle over greens and chèvre. Make a triangle tower above greens by anchoring one enerjive Quinoa Cracker in each chèvre mound and leaning toward centre of plate against other crackers anchored in chèvre.
