Greek Salad



Lettuce-free and hearty, this salad can also be rolled up into a pita with grilled
chicken. Serve with Tripping Tzatziki ( page 00 ) on the side.

Prep Time: 15 Minutes

Ingredients:

2 cups ( 500 mL ) halved grape tomatoes
2 cups ( 500 mL ) diced cucumber
¼ cup ( 50 mL ) diced red onion
¼ cup ( 50 mL ) Balsamic Winger-grette Dressing ( page 00 )
¼ cup ( 50 mL ) crumbled feta cheese
2 tbsp ( 30 mL ) chopped Kalamata olives ( optional )

Cooking Instructions:

In a large serving bowl, toss together tomatoes, cucumber, onion,
and dressing. Sprinkle feta cheese and olives ( if using ) on top. Serve
immediately.
